When a particle moves in a circle with a uniform speed

Both velocity and acceleration are vectors, so they depend on both magnitude and direction. In this case when the

particle moves in a circle with uniform speed it constantly changes its direction but its magnitude remains same. Hence the velocity

changes. In case of acceleration in circular motion its direction is always towards the center along the radius. As the particle moves both direction and radius changes, hence acceleration of the particle also changes.
