Why does it happen?

Fruits can easily be cut with a sharp knife.

While using a sharp knife, force exerted on the knife is acting on a very a narrow area of fruit. Pressure is inversely proportional to area where force is applied. So, a sharp knife can exert large pressure compared to a blunt knife for same force. Thus, fruits can easily be cut with a sharp knife.
