Name the constituents of baking powder and write the function of each constituent of baking powder in cake manufacturing.

For making baking powder, which is a mixture of baking soda and a mild edible acid such as tartaric acid. Tartaric acid helps in the formation of carbon dioxide. When baking powder is mixed in water, the following reaction takes place:

NaHCO3 + H+ CO2 + H2O + sodium salt of any acid


Carbon dioxide produced in the reaction makes the bread or cake fluffy, soft and spongy.
