(i) Difference between Amylose and Amylopecting is as follows:

(i) Heating with HI, glucose forms n-hexane by reducing the all -OH and -CHO groups, suggesting the the straight chain of glucose molecule.



(ii) On reaction of glucose molecule with acetyl anhydride, glucose pentaacetate is formed, which confirms the presence of five free -OH substituents on glucose molecule.



(iii) On reaction of glucose with Bromine water, which is a good oxidising agent, the -CHO group gets oxidised to carboxylic acid that is gluconic acid. This indicates the presence of aldehydic functional group in glucose molecule.
