"Education is that which remains if one has forgotten everything he learned in school" (Para 15). What does Einstein mean by saying this? What is your opinion on the issue?

By this statement, Einstein means that the actual knowledge attains by the student is what he/she remembers for a long time. It is not necessary to learn everything in school, and the real education always remain in one’s mind even if he/she forgets everything whatever the school has taught them.
